Know Your Farmer, Know Your Food

One of my best learning opportunities comes from customer feedback. I recently heard from a customer saying that she had purchased grass-fed and finished beef from another producer and didn’t care for the product at all. After hearing her experience, I realized I had left out a huge piece of the puzzle – knowing what questions to ask is essential! Here are some key points to consider when making the significant financial commitment of a beef side purchase and understanding more about grass-fed and finished beef in general.

■ What time of year was the animal butchered?

We finish beef June-late October.

■ What was the animal grazing the 90 days prior to butchering?
We finish beef on very high quality, diversified green forage. This is HUGE predictor of the flavor and quality of the meat. Our animals are rotationally grazed.
■ How old was animal at butchering?
Our beef are typically 26-30 months.
■ How does the producer interact with his/her animals?
We intentionally create a low stress environment for our animals and treat them with respect and dignity.
■ What type of genetics do you have?
Our farm, plus the local rancher we work with to raise beef, has spent over 15 years selecting for quality, grass-fed genetics.

There is a lot of grass-fed beef out there, but it is NOT all created equal. Finishing beef on pasture is a very fine tuned skill. You cannot turn steers out on a wheat pasture in the middle of winter, send them to the butcher in February and expect tender, flavorful high quality grass finished meat. It just does not work that way.

I will not sell a quarter or side to a person if they have not tasted our meat. We stand behind out products, but I also want the consumer to have knowledge and  buy-in to the product.

Every producer and every consumer has different standards. That’s great! Consumers can make the choice of where and what they buy.

Bottom line. Know Your Farmer. Ask questions!!

It’s coming…

We’ll let you know as soon as we have fresh milk and cream in the store! While it’s hard to be without it all winter, it does make this time of year just a little sweeter.

Here’s to knowing your food and your farmer!
